The way things were swirls esoterically overhead, out of reach until morphing into the very concrete way things are. We reconstruct a reverie and offer up a collective respite via our latest mixed-fermentation beer – That Which Once Was.

After spending nine months in French Oak barrels, we then bottle conditioned That Which Once Was for another nine months. Deep ruby in color, this malt-forward beauty brings forth notes of complex dark fruit, French Oak and tannins, all rounded out with a citrusy, Meyer Lemon-finish.
