Bridlewood Paso Robles Cabernet Sauvignon

Notes of clove, nutmeg, and cinnamon set the stage for our Bridlewood Paso Robles Cabernet Sauvignon. These nuances are complemented by flavors of black currant, blackberry, and cassis. We added about nine percent Petite Sirah to enhance the dark fruit characteristics and structure, resulting in a plush mouthfeel. Round tannins lead to a sweet, smooth finish drizzled with caramel.

The Grapes: We sourced most of our Cabernet Sauvignon from the Sunnybrook Vineyard in the Paso Robles AVA to highlight the distinct terroir of this warm Central Coast region. Here, the southern exposure and subtle but significant coastal influence form an ideal balance between daytime heat and cold nights, creating grapes with complex tannins and flavor compounds. This wine was ideal with mild temperatures throughout the growing season, resulting in a smooth harvest.

Winemaking Notes: The grapes for this wine fermented at a maximum temperature of 88°F to enhance the jammy characteristics. The Cabernet grapes from Paso Robles provided finesse and smoothness, while the addition of Petite Sirah added structure. To further enhance the structure and mouthfeel of this wine, we aged all lots on 100% French oak for up to eight months.
